Chicken with Wahoo Sauce…..
a.k.a. Slowly Cooked Lemon Chicken

We received this tasty recipe from some dear friends in Texas who know what good food tastes like! You and yours will enjoy! Serves 6

6 Chicken breasts – cut in half
2 teaspoons dried oregano
1 teaspoon salt (do not use Morton’s highly refined salt….very bad)
1/2 teaspoon pepper
2 Tablespoons butter
1 Cup water
3/4 cup lemon juice
8 cloves garlic – minced
4 teaspoons organic chicken bouillon
4 teaspoons dried parsley

Combine the oregano, salt and pepper: rub over the chicken. In a skillet, over medium heat, brown the chicken in butter; transfer to a 5 qt crock pot. Saute the garlic in the skillet. Add the water, lemon juice, and bouillon to the skillet. Bring to a boil, stirring to loosen browned bits. Pour over chicken. Cover and cook on low for 2-3 hours or until chicken is no longer pink (It cooks up pretty quickly if breasts are cut in half).
Baste chicken and add parsley.

Serve the Wahoo Juice over chicken and rice or noodles.
